I don't know about you, but I'm in love with avocados! If there is a way to incorporate them into a meal, I'm in! So when I saw some chocolate AVOCADO mousse recipes floating around, I got excited. Avocados are packed with GOOD fats & have anti-inflammatory properties. Why not make a velvety decadent dessert out of them!
chocolate avocado mousse
3 soaked dates
1/2 c cocoa or carob powder
½ tsp vanilla powder or extract
1/3 tsp almond extract
¼ c coconut, almond or rice milk
agave, stevia or honey to taste
1) submerge 3-5 dates in a small cup of warm water for 10 minutes.
2) while dates are submerging, prep & add the contents of 2 avocados, cocoa, vanilla, almond & non-dairy milk to the food processor. Add soaked dates.
3) pulse until smooth
4) sweeten to taste
5) share with a friend
Use with fruit as a dip, put it in a cute little cup & sprinkle goodies like nuts, seeds, shredded coconut & fruit on top, make a parfait, use as crepe filling, or just eat it right out of the food processor :)
